we had dinner at the Zimmer's house last night to celebrate the end of Tina's chemo treatments. i looked through my beloved "Better Homes and Gardens Complete Book of Baking" (i've tried a lot of the recipes in this book and they all have turned out great. you can get it for a steal on amazon.) and decided on Blueberry-Peach Crisp for dessert. quick, easy, delicious. i substituted cinnamon for the coriander, added a pinch of salt and used fresh peaches and blueberries. it was just as tasty the second time around at breakfast. homemade ice cream is always preferrable or you can use Turkey Hill's Homemade Vanilla like i did (if you have TH available to you. it's a local PA company. they're "all natural" vanilla is super good too.)
3c sliced, peeled peaches or frozen unsweetened peach slices (use fresh!)
2c fresh blueberries or frozen unsweetened blueberries (fresh!)
1/4c granulated sugar
1/3c rolled oats
1/3c all purpose flour
1/4c packed brown sugar
1/2tsp ground coriander
1. Thaw fruit, if frozen. Do not drain. Transfer fruit to an ungreased 2-qt square glass baking dish. Stir in granulated sugar. Set fruit aside.
2. For topping, in a medium mixing bowl stir together oats, flour, brown sugar and coriander. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
3. Sprinkle topping over fruit. Bake in a 375 oven 30-40 minutes or until topping is golden.
Serves 6. (Lies. Any self-respecting dessert eater could finish this off with a partner.)
